Finger licking goodness!


Living with PCOS is not easy but who knew we had so many delicious options to make a quick, healthy and flavourful meal? Here is my take on one pan shrimp fajitas and I absolutely devour them each time I make them. 

This is a high source of protein and zinc plus it’s an easy recipe that could be your ultimate go to! 

Here’s what you’ll need: 

2 limes

1 red bell pepper, cored and sliced in strips

1 yellow bell pepper, cored, and sliced in strips

½ large yellow onion, thinly sliced

2 tsp plus ⅓ cup olive or avocado oil, divided

2 cloves garlic

1 tsp himlayan or sea salt

½ tsp dried oregano

½ tsp red chili flakes

½ tsp cayenne pepper

½ tsp paprika

¼ tsp cumin

1 lb raw shrimp, deveined and shelled

6 low carb wraps or tortillas

Sour cream or Greek yogurt for serving

One a baking sheet, toss your onions and peppers, sprinkle a little salt and olive on them and place in the oven to roast for 10 minutes. 

Add garlic, olive oil and your spices to a blender and whip it up into a paste that will be used as a marinade for the shrimps. Place shrimps in ziplock bag, add the marinade and let it sit in the fridge for 30 minutes. 

Roast the shrimps on a baking tray and once done, squeeze some lime on them, add some cilantro and voila! Your one pan shrimp fajitas are ready to eat. You can serve these with steamed cauliflower or gluten free tortilla wraps.
